Ingredients:

Directions:

  1. 1. Using a large frying pan place a tablespoon oil add the sliced red potatoes and cook until soft and add the sausage meat until that is done about 10 minutes and then add the rest of the veggies and cook through for about another 10 minutes.
  2. 2. In a bowl beat the eggs and then add to the pan along with the cheeses, parsley, salt and pepper.
  3. 3. you can add a little more oil if needed you dont want it to stick
  4. 4. I then place the pan in a preheated 350 degree oven for about 10 minutes or until the eggs are baked through then remove fromoven and sprinkle with red pepper flakes and parsley See Photo
