Vegan Potato Soup

Ingredients:

  • 1 large onion
  • 3 lbs potatoes
  • 2 quarts water
  • 1 quart soy milk
  • 8 tbsp margarine

Directions:

  1. Chop celery & onion.
  2. Peel & quarter potatoes.
  3. Place celery & onion in a large pot & add water, bring to a boil & cook 30 minutes.
  4. Add potatoes & cook until potatoes are tender.
  5. Add margarine.
  6. Add mash potatoes (I use instant flakes) & soy milk.
  7. Heat till hot & serve with crackers or hearty sourdough bread. This makes 25 1 cup servings.
