Ingredients:

Directions:

  1. Spray pan with nonstick cooking spray, heat to medium.
  2. Place sausages in pan. Cook, turning occasionally, until browned and cooked through, 12-15 minutes. Transfer to a platter and keep warm.
  3. Meanwhile, whisk together 1 tsp of the oil and the vinegar in a small bowl. Brush the onion and bell peppers with the oil mixture and sprinkle with the salt and pepper. Please the onion and bell peppers in the pan. Cook until softened, 6-7 minutes each side. Transfer to the platter, keep warm.
  4. Brush both sides of the polenta slices with the remaining 1/2 tsp of oil. Place the polenta slices in the pan. Cook until crispy and golden, about 3 minutes. Carefully turn the polenta slices and sprinkle with the Parmesan; cook until crisp and golden, about 3 minutes longer. Add the polenta to the platter and serve at once.
