Ingredients:

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Spray loaf pan with nonstick cooking spray.
  3. Saute onions until transparent then, add in mushroom and carrot.
  4. Cook just until tender crisp then remove from heat.
  5. In a medium bowl, lightly beat egg white.
  6. Add remaining ingredients and cooked vegetables. Blend well.
  7. Shape into a loaf and place in pan.
  8. Bake 50-60 minutes.
  9. Top with ketchup or tomato sauce (optional).
  10. Let stand 10 minutes before slicing.
