Ingredients:

  • 1 cup table salt
  • 1 gallon water

Directions:

  1. For a 12 lb turkey -
  2. Mix all ingredients and stir till salt and sugar are disolved.
  3. Wash off the turkey with cold water and pat dry.
  4. Soak in a plastic container overnight or as long as you can. We soaked about 10 hours.
  5. Put a plate on top of turkey to keep it covered in brine.
  6. Next morning rinse turkey real well.
  7. Cook on your smoker as per manufacturer instructions.
  8. (We smoked our 12 lb turkey for 5 and 1/2 hours after the temperature reached 220°F).
  9. (We used mesquite wood chuncks).
