Grandmas Raisin -filled Cookies

Ingredients:

  • 2 cups brown sugar
  • 1/8 tsp salt
  • 1 cup butter
  • 4 cups flour
  • 2 tsp vanilla
  • 3 eggs
  • 1 tsp flour
  • 1 cup water
  • 1 1/2 cup ground raisins
  • 1 tsp. lemon juice

Directions:

  1. Cream sugar, salt and butter.
  2. Beat in eggs and vanilla
  3. Sift together dry ingredients.
  4. Add to creamed mixture.
  5. Set aside
  6. For the raisin filling:
  7. Mix flour and sugar.
  8. Stir in water slowly
  9. Add nuts, raisins and lemon juice
  10. Cook until slightly thickened.
  11. Cool.
  12. Take two rounds of unbaked dough(rolled and cut with a drinking glass) and put a spoonful of filling in the center of one cookie.
  13. Put the second round on top of the bottom one.
  14. Seal with top of fork.
  15. Bake at 350* for 12- 15 min.
  16. Enjoy!
