  5. Lb ground turkey
  6. 1/2 teaspoon seasoning salt or smoked salt
  7. 1/2 teaspoon black pepper
  8. 1/2 teaspoon garlic powder
  9. Pinch of clove
  10. Pinch of red pepper flakes
  11. Pinch of cayenne (optional)
  12. Teaspoon sage
  13. 1/2 -1 teaspoon fennel seed
  14. Teaspoon thyme
  15. Tablespoon olive oil (option)
  16. Butter and olive oil fro frying
  17. Instructions
  18. Place ground turkey in a large bowl; set aside.
  19. Mix together spices.
  20. Add spices to ground turkey and mix until spices are evenly distributed throughout the meat.
  21. Mix in olive oil if using. (this add extra moisture)
  22. Shape turkey sausage into small patties.
  23. Fry up a small sample patty to test out the seasonings. Adjust the seasoning if needed.
  24. Refrigerate overnight.
  25. Heat a bit of olive oil and butter in a large skillet on medium heat.
  26. Place sausages into the hot skillet and cook until until browned and the middle is no longer pink.
  27. Cooking time will vary based on the thickness of the patty.
  28. Be careful not to overcook or the sausages will be dry in texture.
  29. Let sausage drain on paper towels.
  30. Serve or freeze.
