  1. Preheat oven to 350 degrees F. Cover cookie sheets with parchment paper.
  2. In a medium bowl, cream together butter, white sugar and brown sugar. Beat in eggs one at a time, stir in vanilla. Combine flour, baking soda, salt; stir into creamed mixture. Mix in oats, coconut and chips.
  3. Drop dough by large tablespoons (I use a small cookie scoop) onto prepared cookie sheets, 2 inches apart. Bake cookies for 14 minutes in preheated oven. Allow cookies to cool on baking sheet for a couple of minutes before removing to a wire rack to cool completely.
