Traditional Congee/Chinese Rice Pudding

Ingredients:

  • 1 cup brown rice
  • 9 cups water
  • 1/2 cup mung beans

Directions:

  1. Bring 8-10 cups of water to a boil
  2. Pour in 1 cup brown rice, 1/5 cup of fresh ginger, and half cup of mung beans.
  3. Reduce to simmer and cook for three hours.
