Tomatoes And Mangos With Basil Vinaigrette

  1. Combine shallot, vinegar, salt pepper and mustard in processor or blender. slowly add the olive oil with machine runnning. add basil leaves. reserve dressing.
  2. Peel and slice mangos into 6 slices each (3 from each side of pit)
  3. Slice tomatoes
  4. Top each mango slice with a tomatoe slice
  5. Overlap on a serving platter
  6. Drizzle with vinaigrette
  7. Garnish with shredded basil.
