Tomato Couscous

Ingredients:

  • 3/4 cup couscous
  • 2 medium tomatoes, chopped or equivalent of cherry tomatoes
  • 1/2 tsp. cumin
  • 1/4 tsp. cinnamon
  • 1/4 tsp. curry powder
  • 1 tbsp. butter

Directions:

  1. Saute onion and tomato in butter
  2. Put broth, cumin, cinnamon, and curry powder in saucepan
  3. Bring to boil, then add couscous
  4. Remove from heat, cover and let sit for 5 minutes
  5. Stir in tomatoes and onion
