Couscous and Sun-Dried Tomatoes

Ingredients:

Directions:

  1. Heat oil in pan that has a tight fitting lid.
  2. Saute onions until they just start to soften.
  3. Add the tomatoes and continue to saute about 5 minutes more, or until the onions become translucent.
  4. Pour in boiling water, stir and bring back up to a boil.
  5. Add couscous and stir.
  6. Cover and simmer for 10 minutes.
  7. Fluff with a fork when done.
