Tomato-basil Soup Gooseberry Style

Ingredients:

Directions:

  1. Saute onions,basil, and garlic in a pan sprayed with vegetable oil spray.
  2. Saute till onions tender.
  3. Process whole tomatoes in a blender or processor till smooth.
  4. Add tomato puree,diced tomatoes and sugar to onion mixture.
  5. Simmer,uncovered, about 2 hours.
  6. Add seasonings and heavy cream:cook till heated through.
  7. Garnish with croutons or fresh basil leaves.
  8. Makes 11 cups.
