Tomato, Basil, and Mozzarella Chicken

Ingredients:

Directions:

  1. Heat a medium skillet over high heat and add coconut oil
  2. Once coconut oil turns to liquid, add garlic and turn heat to medium, cooking for about a minute
  3. Sprinkle half of the chopped basil on top of the chicken, and put chicken, basil-side down, into the skillet.
  4. Top the chicken with the rest of the chopped basil.
  5. Cook chicken until lightly browned keeping basil spread on both sides.
  6. Remove chicken from skillet and place on a separate plate.
  7. Slice Mozzarella cheese in 1/4 in. slices to cover each piece of chicken
  8. Cover the Mozzarella cheese with 1 whole fresh basil leaf (without stem)
  9. Slice tomatoes 1/8-1/4 in. slices and top each chicken with at least 2
  10. Serve and enjoy
