  1. Peel, then finely chop the onion and cook
  2. In a pan with a little olive oil until soft. Add
  3. To a bowl with the pork mince, chilli powder,
  4. Mixed herbs, zest of the lemon and egg. Whizz two
  5. Baps in a blender to make breadcrumbs and add to
  6. The bowl. Then simply add the chopped semi-dried
  7. Tomatoes and fresh basil to the mixture. Season with salt and pepper, and combine.
  8. Shape into four equal patties. Then griddle for 4-5 minutes on each side, turning every couple of minutes until no pink meat remains and they are piping hot and cooked throughout. Alternatively, try them on the barbecue, turning regularly.
