  1. Slice the potatoes and layer the pieces on the bottom of a baking dish that is lined with olive oil. On the stove, heat up some spinich with olive oil, garlic, onions and parsely with a touch of masala wine...add mushrooms, as well and saute this stuff...
  2. Now, pour over the sliced potatoes and spoon some ricotta cheese over the top and then create a seond and third layer of potatoes using the sauted spinach, mushrooms, garlic, parsley, onions and ricotta cheese as the filler inbetween the layers....
  3. Season with fresh black pepper and cook this casserole for about forty minutes at 375.....
  4. The potatoes are potassium rich and good for high blood pressure.
