Ingredients:

Directions:

  1. Heat the oil in a wok and fry the garlic till just golden, add the pork and fry 4 minutes
  2. Add the onion.
  3. Add the fish sauce, sugar, black pepper, cook for 3 minutes.
  4. Add the red pepper, cucumber, tomato, pineapple and spring onions.
  5. IF the mixture is dry add a couple of tablespoons of water.
  6. Stir fry for 4 minutes.
  7. Garnish with coriander leaves and shredded spring onions.
  8. Serve with fried rice or noodles.
