Ingredients:

  • 2 tbsp loose thai tea
  • 3/4 cup water
  • 2 tbsp sugar
  • 1/4 cup half-and-half

Directions:

  1. Bring the tea and the water to a boil in a saucepan and simmer over low heat for 3 to 5 minutes, depending on your taste. Strain the tea through a Thai tea strainer into another container and stir the sugar into the tea. Pour the tea over ice in a tall glass immediately, or after the tea has cooled to room temperature. Top with the half-and-half.
  2. VARIATIONS: For a really rich drink, substitute heavy cream for the half-and-half and proceed as directed above. You may also omit the cream altogether.
