Ingredients:

Directions:

  1. Cook onion and pepper in olive oil until onions yellow
  2. Add beef until mixture falls apart
  3. Stir in diced tomatoes, chicken stock, rice and chili powder.
  4. Salt & pepper to taste
  5. Pour into greased 2 qt casserole dish
  6. Cover & bake- remove cover last 15 minutes
  7. 365 degrees for 90 minutes
