Ingredients:
1 large onion
1/2 green pepper
1 lb ground beef
32 ounces diced tomatoes
16 ounces chicken stock
1 3/4 cup white rice, uncooked
1 tsp chili powder
3 tbs olive oil
Directions:
1. cook onion and pepper in olive oil until onions yellow
2. add beef until mixture falls apart
3. stir in diced tomatoes, chicken stock, rice and chili powder.
4. salt & pepper to taste
5. pour into greased 2 qt casserole dish
6. cover & bake- remove cover last 15 minutes
7. 365 degrees for 90 minutes
