Teriyaki Vegtable Fried Rice

Ingredients:

  • 1.5-2 cups fresh or frozen, diced/sliced/jullianed vegtables (suggestions: bell peppers, onion, mushrooms, carrots, peas, water chestnuts, bamboo shoots, broccoli, celery)
  • 2 tsp seasame seed oil
  • 4 tsp soy sauce
  • 1 package morningstar farms meal starters chik'n strips (optinal, could probably also use real chicken or tofu)
  • 1/4 cup peanuts or cashews (optinal)

Directions:

  1. Add vegtables to skillet or wok. Pour teriyaki over vegtables. Cook on medium heat until teriyaki is mostly gone stiring frequently. (If adding Chik'n you can tear the strips to bite sized peices and put a little soy sauce on them. Then microwave or heat the Chik'n in a seprate skillet. Add heated Chik'n either to the vegtables before the rice, or at the same time as the peanuts.)
  2. Push vegtables to the side. Put Seasame Seed oil on open side of skillet. Add rice and pour soy sauce over rice. Stir just rice/soy sauce until heated and mixed compleatly.
  3. Sprinkle peanuts on top and mix everything together.
  4. Serve with chow mein noodles and extra soy sauce if desired.
