Tender Carrots With Apricots

Ingredients:

  • 1/2 cup dried apricot
  • 1 1/2 cups carrots, cut into 1/2 inch rounds
  • 1 1/2 tbsp water
  • 1/8 tsp sugar
  • 1 1/2 tsp fresh parsley (optional)

Directions:

  1. Cover apricots with hot water in a bowl and soak 1 1/2 hours.
  2. Drain and pat dry.
  3. Cut apricots into thin strips.
  4. Combine next 4 ingredients in a heavy nonstick pan over medium heat.
  5. Cover tightly, reduce heat to low and cook 12-15 minutes, or until carrots are just tender.
  6. Add apricots and return to heat 1-2 minutes.
  7. Serve carrots sprinkled with parsley if desired.
