Tangy Roasted Asparagus

Ingredients:

  • 2 tsp lemon herb infused olive oil (i used a lemon thyme which was fantastic with the bright green taste of the asparagus, but you could use lemon basil, or even verbena
  • 1 lime
  • if you don'tsp want to bother with the infused oil, just use regular olive oil, and replace the black pepper with lemon pepper

Directions:

  1. Combine olive oil with salt and pepper and toss with asparagus
  2. Roast asparagus in 425 oven for about 15 minutes(a lil more if you like your veggies softer..we like 'em pretty crisp :)
  3. When done, immediately sprinkle with cheese, a squirt of lime juice and a lil lime zest.
  4. You could toss 'em under the broiler for a minute, if you want, to brown the cheese up a bit...I didn't want that, this time...I wanted the creaminess to remain :)
