Tangy Roasted Asparagus

This simple roasted asparagus gets it's uniqueness from the oil it's tossed with, as well as the quick topping added just before serving. If you don't already infuse your own oils, I recommend it...just make sure to do it right by using DRY herbs! Read more ! :) Give me a shout if you want any advice.
Ingredients:
2lbs fresh asparagus, trimmed
2t lemon herb infused olive oil(i used a lemon thyme which was fantastic with the bright green taste of the asparagus, but you could use lemon basil, or even verbena
1 lime
4oz goat cheese, crumbled
kosher or sea salt and fresh ground black pepper
**if you don't want to bother with the infused oil, just use regular olive oil, and replace the black pepper with lemon pepper
Directions:
1. Combine olive oil with salt and pepper and toss with asparagus
2. Roast asparagus in 425 oven for about 15 minutes(a lil more if you like your veggies softer..we like 'em pretty crisp :)
3. When done, immediately sprinkle with cheese, a squirt of lime juice and a lil lime zest.
4. You could toss 'em under the broiler for a minute, if you want, to brown the cheese up a bit...I didn't want that, this time...I wanted the creaminess to remain :)
