Asparagus Omelets W/ Goat Cheese

Ingredients:

Directions:

  1. Whisk egg substitute, eggs, & milk.
  2. Stir in scallions, thyme, parsley, salt & pepper.
  3. Place asparagus (trimmed and cut into 1 pieces) and water in large microwaveable bowl.
  4. Cover with vented plastic wrap and microwave on high for 4 minutes.
  5. Stop & stir after 2 minutes. Drain, pat dry, and add to egg mixture.
  6. Heat nonstick skillet coated with cooking spray over medium heat.
  7. Pour 1/4 of egg mixture into skillet, allowing it to cover bottom of pan.
  8. Cook for 2-3 minutes, or until bottom just begins to set.
  9. Sprinkle with 1 Tbsp cheese.
  10. Add 1/4 of asparagus pieces.
  11. Cook for 5 minutes or until eggs are set.
  12. Fold omelet in half.
  13. Cook for additional 3 minutes until cheese is melted.
  14. Garnish with chives.
