Swiss Cheese & Spinach Quiche

Ingredients:

Directions:

  1. On a lightly floured surface, unroll pastry and transfer to a 9-inch pie plate.
  2. Trim pastry to 1/2 inch beyond the edge of the plate and flute edges.
  3. Line unpricked pastry with a double thickness of heavy duty aluminum foil.
  4. Bake at 450 for 8 minutes, remove foil and bake for another 5 minutes.
  5. Cool on a wire rack and reduce the oven to 350.
  6. In a small skillet cook the bacon, onions and red pepper until the veggies are tender and drain.
  7. Stir in the spinach.
  8. Spoon spinach mixture into pastry.
  9. In a small bowl, combine the eggs, cottage cheese, Swiss cheese and seasonings.
  10. Pour over spinach mixture.
  11. Bake for 35 - 40 minutes or until a knife inserted near center comes out clean.
  12. Let rest for 10 minutes before cutting.
  13. Serve with sour cream.
