Swiss and Spinach Stuffed Mushrooms

Ingredients:

Directions:

  1. Saute the onions and garlic in a little olive oil, set aside to cool.
  2. Squeeze out the thawed spinach really well, shred the cheese, stem the mushrooms and set open side up on a cookie sheet drizzled with olive oil.
  3. Mix all but mushrooms and stuff by hand (spoons are an exercise in frustration here), this will help put a light coating of oil on the outside of the mushrooms as well.
  4. I set these in the fridge for a few hours till dinnertime but i don't think the chilling is really necessary. bake at 375 for 15 min.
