Swet Potatoes With Rum

Ingredients:

  • 6 sweet potatoes, peeled and cut crosswise into 1/2 thick slices
  • 1/4 cup butter + 2 tbsp
  • 1/2 cup sugar
  • 1/2 cup jamaican rum

Directions:

  1. Saute the potatoes in 1/4 c butter, turning often to prevent sticking.
  2. When the potatoes are light brown and tender, transfer to a chafing dish that has the 2 Tbsp butter already melted.
  3. Sprinkle the sugar over teh potatoes and stir lightly.
  4. Add the rum, tip the dish, ignite.
  5. Baste the potatoes in the syrup.
  6. Serve immediately (duh, you're doing flambe at the table, right?)
