Sweet Potatoes With Bacon and Orange

Ingredients:

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Scrub & wash the sweet potatoes then cut each in half across the middle.
  3. Julienne the potatoes, then place in a microwave proof dish, cover, & microwave on high for 4 minutes.
  4. In a small bowl, blend together the syrup, juice concentrate, zest & thyme.
  5. Put the microwaved sweet potatoes in a glass baking dish & toss them with the syrup mixture.
  6. Spray the top with a nonstick baking spray, then bake for 20 minutes.
  7. When done, sprinkle the crumbled bacon over the top of the orange sweet potatoes & serve.
