Sweet Potato Sticks With Herbed Orange Dip

Ingredients:

Directions:

  1. Preheat oven to 400 *F
  2. Cut sweet potatoes into strips, about 1/3” thick by 2 to 3 inches long
  3. Place sticks on cookie sheet
  4. In small bowl combine butter, lime juice, and salt. Mix well.
  5. In another small bowl, combine sugar, cinnamon, ginger, and nutmeg.
  6. Sprinkle over the sticks and toss to coat evenly.
  7. Bake for 20 – 25 minutes.
  8. Stir twice during baking time, and bake until sticks are golden brown.
  9. Drain sticks on paper towels, and let cool 10 minutes before serving.
  10. For the Dip:
  11. In small bowl, beat the cream cheese until fluffy
  12. Gradually add sour cream.
  13. Beat until smooth.
  14. Beat in remaining ingredients
  15. Cover and refrigerate 2 to 3 hours to blend flavors.
