Sweet Potato-Radish Noodles Recipe

Sweet Potato-Radish Noodles

Ingredients:

  • 1 cup water
  • 1 (14 oz) can diced tomatoes
  • 1 beef bouillon cube (could substitute vegetable to make this recipe vegetarian)
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp tarragon
  • 1/3 cup small shell pasta (or whatever other small pasta you have around)

Directions:

  1. Par-boil sweet potatoes in water until almost tender (about 5 minutes). Do not drail.
  2. Add broccoli, tomatoes, radishes and spices.
  3. Return mixture to a boil and simmer for 8-10 minutes.
  4. Add pasta.
  5. Continue to simmer until pasta is tender.
  6. Serve and enjoy.
