I cobbled this recipe together from some things in the kitchen that I needed to use up. It turned out much better than I'd anticipated. Additions of any other vegetables you have laying around (peas, carrots, cauliflower, green beans, etc.) could probably work without damaging the tastiness in any large way.
Ingredients:
1 small sweet potato, diced
1 cup water
1/4 cup frozen broccoli
1 (14 ounce) can diced tomatoes
4 radishes, diced
1 beef bouillon cube (could substitute vegetable to make this recipe vegetarian)
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon tarragon
1/3 cup small shell pasta (or whatever other small pasta you have around)
Directions:
1. Par-boil sweet potatoes in water until almost tender (about 5 minutes). Do not drail.
2. Add broccoli, tomatoes, radishes and spices.
3. Return mixture to a boil and simmer for 8-10 minutes.
4. Add pasta.
5. Continue to simmer until pasta is tender.
6. Serve and enjoy.
