Ingredients:

Directions:

  1. Preheat the oven to 350F. Grease a 2-quart shallow baking dish.
  2. Mash the sweet potatoes in a large bowl. Stir in the sugar, butter and nutmeg. Shape the mixture into 8 balls and press a marshmallow into each. Coat the balls with cornflakes and flatten slightly.
  3. Arrange the balls in the prepared baking dish. Bake until lightly browned, 10 to 15 minutes.
