Sweet Potato Cranberry Pecan Loaf

Ingredients:

  • 3/4 cup sugar
  • 1/2 cup milk
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 3/4 cups pancake mix
  • 1/2 cup finely chopped pecans

Directions:

  1. Preheat oven to 350.
  2. Mix together sweet potatoes, sugar, milk, egg, cinnamon and nutmeg.
  3. Stir in pancake mix until dough is formed. Stir in pecans and cranberries.
  4. Spread dough into a bread pan sprayed with cooking spray.
  5. Bake 45-50 minutes.
