Sweet Potato Casserole

Ingredients:

  • 3 -4 cups sweet potatoes, mashed (canned okay)
  • 1 tsp vanilla
  • 1/2 cup butter
  • 1/3 cup milk
  • 1 cup coconut
  • 1/3 cup flour
  • 1/2 cup butter

Directions:

  1. Preheat oven to 350F and grease a 3 quart casserole.
  2. Mix together mashed sweet potatoes, eggs, vanilla, butter, milk and coconut.
  3. Pour into greased 12-inch round casserole.
  4. For topping, mix together brown sugar, nuts, flour and butter.
  5. Crumble over the sweet potatoes (not too thick as it's sweet).
  6. Bake for 25 to 35 minutes.
