Sweet Potato and Peanut Chips

Ingredients:

Directions:

  1. Preheat oven to 475.
  2. Process peanuts in food processor until fine but not powdered. Transfer to a bowl.
  3. Slice potatoes 1/8th inch, dip in melted butter.
  4. Arrange on silpat lined baking sheet.
  5. Sprinkle peanuts on top.
  6. Bake until the tops are lightly browned and potatoes are tender, about 15-20 minutes. Watch to prevent burning.
  7. Transfer to paper towel and drain.
  8. Salt to taste.
  9. Cool 5 minutes.
