Ingredients:

Directions:

  1. Preheat oven to 400 degrees. Prepare an 8x8 baking dish with cooking spray.
  2. In a saucepan, heat olive oil, then add garlic. Cook until slightly browned.
  3. Add onions and peppers. Saute until onions become translucent.
  4. Add pinto beans, tofu cubes, liquid smoke and soy sauce. Mix with onion and peppers.
  5. Stir in sugar and spices. Cover saucepan with lid and simmer for approximately 10 minutes.
  6. Pour cooked mixture into baking dish. Bake in over for 25-30 minutes.
