Ingredients:

  • 8 cups milk
  • 1/2 cup plain yogurt

Directions:

  1. When you buy the plain yogurt, make sure that you read the ingredients and make sure you get a plain yogurt that only has cultured milk, and nothing else (good brands are stonyfield wallaby brown cow the vons store brand organics plain yogurt ) if you get organic is BETTER!
  2. You will only need to buy yogurt 1 time, because you will be able to use your own yogurt to make more.
  3. You will also need a food thermometer, but if you do not have one, you can still get a yogurt, but with the thermometer you will achieve the best results.
  4. Make sure that all the utensils you will be using are spotless sparkling super clean!
  5. Put the 8 cups of milk in a stainless steel pot and turn on low.
  6. Stirring occasionally, let the milk slowly warm up to 185°F.
  7. If you are not using a thermometer, warm up to the point that is hot that you see it evaporating, but do NOT let in boil.
  8. As soon as you reach the right temperature, fill your kitchen sink with cold water, and put your pot in this bath, and stir to cause the milk to quickly cool down to 115-120°F.
  9. If you are not using a thermometer, try to feel the temperature and compare it to the hottest water that can come out of your faucet, mine is set at 123F, if it is about the same it should be cool enough.
  10. Take 2-4 tablespoons of the now cooled milk and mix it with the yogurt, mix well.
  11. Mix the mixed milk and yogurt to the rest of the cooled milk, stir well.
  12. Pour the milk mixed with the yogurt in containers with lids.
  13. You can use clean old yogurt container or tupperware, just make sure you have lids!
  14. Take your pick nick cooler and fill it with the hottest water coming out of your faucet.
  15. Put the containers with milk and yogurt in it, close the cooler, and wait for 8 to 12 hours.
  16. I always wait 12 hours because i like my yogurt on the thicker side.
  17. Refrigerate for at least 6 hours before enjoying.
  18. It is delicious just plain, or with fresh fruit, or cocoa powder and sugar, or cinnamon, or whatever your fantasy will suggest.
  19. 1 more thing, did you know that you can substitute oil and butter for the same amount of plain yogurt in all of your baking recipes?(pancakes waffles breads etc).
