Summer Berry Chicken Salad

Ingredients:

Directions:

  1. Sprinkle the sugar evenly into a large skillet over medium heat. Top with walnut pieces See Photo. When sugar begins to melt, stir well to completely coat the walnuts See Photo. Turn heat to low, spread nuts evenly in skillet, and cook another 2 minutes.
  2. Remove to a lightly-buttered dinner plate and let cool completely. See Photo
  3. Grill chicken breasts & set aside See Photo. When completely cooled, slice chicken thinly.
  4. Core and cut apple into small pieces. (If desired, peel apple first.) Place in large bowl. Slice orange in half and squeeze all of the juice over the apple pieces. Toss to coat. See Photo
  5. Add the chicken and berries to the bowl and gently toss to combine (don't crush the berries). Add poppyseed dressing and toss to coat all pieces. Cover & refrigerate for 30 minutes or until ready to serve.
  6. To serve, spoon chicken mixture on top of chopped lettuce and toss to dress the lettuce. Sprinkle with caramelized walnuts and feta cheese.
