Stuffed Salmon Fillet

Ingredients:

  • 1 lb salmon fillet
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tbsp pesto sauce

Directions:

  1. Preheat oven to 400.
  2. Make a slit 2/3 of the way through the center of each fillet.
  3. Season with salt and pepper.
  4. Combine the spinach and pesto; spoon the mixture into each slit.
  5. Arrange fillets on broiler pan coated with cooking spray.
  6. Roast for 8-10 minutes.
