Stuffed Salmon Fillet

Ingredients:
1 lb salmon fillet
1 pinch salt
1 pinch pepper
10 ounces baby spinach, chopped
2 tablespoons pesto sauce
Directions:
1. preheat oven to 400.
2. make a slit 2/3 of the way through the center of each fillet.
3. season with salt and pepper.
4. combine the spinach and pesto; spoon the mixture into each slit.
5. arrange fillets on broiler pan coated with cooking spray.
6. roast for 8-10 minutes.
