Stuffed Portabello Mushrooms

Ingredients:

  • 3 medium mushroom caps
  • 1 egg
  • 1/2 tsp garlic
  • 1/2 cup spinach
  • 3 slices of cheese
  • 3 tomato slices

Directions:

  1. Wash mushroom caps and scrape out a little on the gills. Preheat oven for 350F. Chop or rip the whole wheat slices into a bowl and add the egg and garlic. Add in chopped up spinach and beat mixture. Fill the caps with mixture and top with the tomato slice.
  2. Cook until firm. If your oven has this option use Broil when you add the cheese for a quick melt!
  3. Side with your favorite veggies!
