Stuffed Garlic and Spinach Mushrooms

Ingredients:

  • oil
  • 4 garlic cloves
  • 150 g spinach
  • 1 pinch nutmeg

Directions:

  1. Preheat the grill to medium hot. Finely chop the mushroom stalks and set aside. Spray the mushroom caps all over with oil and place on a grill rack, gill-side up. Grill gently for 5-6 minutes, then turn them over, season well, and grill for another 5 minutes, or until they start weeping black juice. Turn them over so they are gill-side up again and set aside until needed.
  2. Spray a large, non-stick frying pan with oil and place over a high heat. Add the garlic, spinach, and reserved chopped mushroom stalks, stir-fry for 4-5 minutes, then add the nutmeg.
  3. Preheat the grill until hot. Season the spinach mixture and divide between the mushrooms. Sprinkle over the Parmesan and place under the grill for 2-3 minutes, or until the cheese has melted. Serve immediately.
