Streusel-Topped Gingerbread Bars

Ingredients:

  • 1/2 cup sugar
  • 1/4 cup butter
  • 1 cup flour
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup buttermilk
  • 1/4 cup molasses

Directions:

  1. Heat oven to 375°F.
  2. Grease the bottom only. of a 13x9-inch baking pan.
  3. In a large bowl combine sugar and butter; blending well,
  4. Lightly spoon flour into measuring cup; level off.
  5. Add flour, ginger, cinnamon, allspice, and salt; mix until crumbly.
  6. Reserve a 1/3 cup of the mixture for the topping; set aside.
  7. To the remaining mixture, add baking soda; mix well.
  8. Add buttermilk, molasses and egg; blend well.
  9. Pour batter into prepared pan; sprinkle with reserved crumb mixture.
  10. Bake 25-35 minutes or until a toothpick inserted in the center comes out clean.
