Strawberry Walnut Skillet Cake

Ingredients:

  • 1/2 stick butter
  • 3/4 cup packed light brown sugar
  • 1 3/4 cups frozen or fresh strawberries (i chopped them up a little bit but maintained some chunks)
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 tsp vanilla
  • 3/4 cup buttermilk

Directions:

  1. Melt 1/2 stick butter in skillet over medium heat. Stir in brown sugar and simmer 1-2 minutes
  2. Stir in strawberries and walnuts to skillet mixture. Remove from heat
  3. Preheat oven to 350 degrees
  4. Whisk together flour, baking powder, baking soda, and salt.
  5. Beat together butter and sugar in large both with electric mixture on high until light and fluffy.
  6. Add eggs 1 at a time and beat well after each addition
  7. Beat in vanilla.
  8. On low speed alternate beating in flour and buttermilk until just combined.
  9. Return skillet topping to heat until it begins to bubble.
  10. Spoon batter carefully on top of skillet mixture then transfer to oven.
  11. Bake 20-25 minutes.
  12. Remove from oven and cool in skillet for 15 minutes.
  13. Invert onto plate and allow 1 more hour of cooling
  14. Serve with ice cream or whipped topping if desired!
