Ingredients:

  • 3 cups flour
  • 3/4 tsp salt
  • 3/4 cup shortening
  • 2 1/4 cups sugar
  • 3 eggs
  • 6 tbsp buttermilk
  • 1 1/2 cups mashed bananas

Directions:

  1. Preheat oven to 350 degrees.
  2. Sift dry ingredients together, set aside.
  3. Cream shortening and sugar.
  4. Add eggs and buttermilk to sugar mixture.
  5. Combine dry ingredients into wet.
  6. When incorporated, stir in mashed banana.
  7. Pour batter into a greased, floured tube pan (angel food cake pan).
  8. Bake 45-50 minutes, or until a toothpick inserted in center of cake comes out clean.
  9. Cool slightly, run knife around edges of pan to loosen cake, remove cake from pan.
  10. Finish cooling cake on a wire rack.
  11. Slice into wedges.
