Squash Dinner Rolls

Ingredients:

  • 1 1/2-2 1/2 cups flour, divided
  • 2 (1 oz) packages fast rising yeast
  • 1 -2 tsp salt
  • 1/2 cup milk
  • 1/4 cup honey
  • 1 -2 tbsp margarine
  • 3/4 cup mashed squash
  • 1 egg

Directions:

  1. Combine 1 1/2 cups flour, whole wheat flour, yeast and salt in a large mixing bowl.
  2. Heat milk, honey and margarine ina a small saucepan until very hot (125-130*).
  3. Add the milk mixture to the flour mixture, mixing until smooth.
  4. Mix in squash and egg. Miex enough remaining flour to make a smooth dough.
  5. Knead dough on floured surface until smooth and elastic, about 5 minutes.
  6. Place dough in greased bowl; let stand, covered, in a warm place until double in size - 30-45 minutes.
  7. Punch down dough.
  8. Divide dough into 24 pieces; shape into round rolls and place in greased muffin tins.
  9. Bake at 375 for 20-25 minutes or until browned.
