Spoon Bread With Corn

Ingredients:

  • 3 1/2 cups milk
  • 2 tsp salt
  • 1 can (about 1 lb or 2 cups) cream-style corn
  • 2 tbsp butter

Directions:

  1. Heat 3 cups milk over hot water in top of double boiler.
  2. Mix cornmeal with remaining milk and salt; add to hot milk in double boiler.
  3. Cook, stirring, until thickened.
  4. Cover and cook for another 5 minutes.
  5. Add corn and cook for 3 minutes longer.
  6. Add butter and stir until butter has melted.
  7. Fold in beaten eggs. Transfer mixture to a greased 2-quart casserole.
  8. Bake at 375° for 1 hour, or until firm but light (It will sink when removed from oven).
  9. Serve immediately with butter
