Spinach Meatballs Wrapped in Bacon

Ingredients:

  • 1/4 cup water
  • 1/2 lb spinach
  • 1/4 cup brown sugar
  • 1 tbsp lemon pepper
  • 1 tbsp chili flakes
  • 1/2 tbsp italian seasoning
  • 1 medium onion (liquied in blender)
  • 5 garlic cloves (liquified in the blender)
  • 1 lb ground beef (or pork)

Directions:

  1. Wash spinach, and blend with 1/4 cup of water (spinach should look like a green smoothie).
  2. Place everything in large bowl, mix until everything is fully green.
  3. Roll into 1 inch balls, and wrap in bacon.
  4. There should be a side that's not covered in bacon, place that facing down on the pan that goes into the oven.
  5. Cook 400 degrees Fahrenheit for 40 minutes.
  6. After 40 mins, pick out the largest meatball you can eyeball and cut it open to check how well done it is.
