Ingredients:

Directions:

  1. Cook and drain spinach... (I like to remove the paper on the box and place the box of spinach on a microwave safe plate and cook for 5 1/2 minutes...the spinach then just needs to be removed from the box and drained well.....easy!
  2. Combine all the ingredients except the spinach and the stuffing...blend well.
  3. Add the drained cooled spinach and blend thoroughly.
  4. Add the stuffing and mix together.
  5. Form into 1 inch balls and place on a lined cookie sheet ( I like to use a cookie scoop)
  6. Freeze until they are hard.
  7. Bake at 350 for about 20-25 minutes until slightly browned.
  8. Serve and enjoy!
  9. Note~~~ If you do not want to bake at this point, after the spinach balls are frozen, I place them into a zip-lock freezer bag, pop into the freezer and remove as many as I want or need when needed.
  10. I got 55 spinach balls out of this recipe today....
